BROWN RICE as a whole grain is preferable to white rice, however rice was found to contain arsenic. Brown rice syrup is to be avoided. Fertilizer obtained from chickens fed arsenic type substances contaminate soils, remaining for 45 years. Rice more than other grains, contains higher levels of arsenic from the sitting water used to irrigate rice. Brown rice has the highest arsenic content, likely from massive absorption of water-soluble arsenic into its roots, concentrated in the brown hull. Brown rice is rich in fiber, vitamin E compounds, cholesterol lowering antioxidants but black rice is even a greater powerhouse containing higher amounts of antioxidants preventing heart attacks. Rice is easily cooked by soaking first then using a pressure cooker. Black rice has the highest amount of protein and double the fiber of brown rice.
