CHICORY  Chicory (Chihorium intybus) (endive) made into a green juice can help ↓ caffeine cravings. To ↓ oxalates in the leaves, try a quick 3 second dip in boiling water, discard the water which captures the oxalates. Liver injury is protected by chicory. The roots are dug up, washed and roasted until they turn a dark brown. The roots are then powdered and brewed like coffee. The leaves can be eaten in salads or cooked and roasted as a vegetable.
