SUNCHOKE is called helianthus tuberosus, Jerusalem artichoke. It sprouts a sunflower on the top from a tubar root. The root is eaten and it is high in inulin. Jerusalem artichokes are a good source of hair health promoting nutrients such as iron, copper, vitamin C.
