JAGGERY is a coarse dark brown sugar made by evaporation of the sap of palm trees. It was originally made from the sugary sap of the Palmyra palm, the date palm or sugar date palm. It should not be hard; it should be able to break easily just with the pierce of a fork. This shows that it is not adulterated. It is thought to be high in iron. It should be dark brown in color to prove that it is minimally processed. Jaggery can be made from many different plants. If it is made from sugar cane reeds, then this is harmful to PKD/PLD and will give a headache, an overgrowth of yeast, and raise lipids.
