XANTHAN is secreted by Xanthomonas campestris bacteria; seen as black overgrowth on rotting vegetables; commercially derived from corn, wheat, or soy using isopropyl alcohol. It is as an emulsifier, ice cream thickener, in gluten free baking, causing an ↑ allergies, bloating & diarrhea, ↑ PKD/PLD symptoms. It may cause necrotizing enterocolitis. Guar gum is an alternative.
